Where tradition meets flavor

When people think of Bavaria, most imagine wide meadows and Lower Bavaria’s Tuscany. Hikes right through nature and the warm hospitality in the region’s inns also come to mind.

And the food. Weisswurst, pretzels, Leberkäse – the Free State is known for bold flavors. What is less well known is that Bavarian cuisine can be just as light. Regional ingredients and a slightly different preparation are enough to incorporate traditional dishes into a mindful diet. We show you how Bavaria’s flavors can also be balanced.

Fresh and regional

It all begins with the ingredients. In Bavaria, much of what we eat grows right on our doorstep: crisp vegetables from the weekly market, juicy apples from meadow orchards, and freshly caught fish from local waters.

The potato plays a leading role here. Baked, boiled, or mashed, this humble staple is rich in nutrients and keeps you feeling full for a long time. Whole grains make their way into bread and even dumplings. And fresh herbs do what good craftsmanship always does: they highlight what the ingredients naturally bring to the table.

If you’d like to ease into it, start with potato and cucumber salad, warm coleslaw, or dumpling carpaccio.

Classics reinterpreted

No one has to give up the classics. In most cases, small adjustments are all it takes.

Instead of roast pork, a chicken or turkey fillet goes into the oven, tender and aromatic, with a crispy crust thanks to gentle cooking and very little oil. Obazda also works beautifully with low-fat quark and organic Camembert instead of butter and rich cheese – without losing any of its flavor, but becoming much lighter. Serve it with a wholegrain pretzel or homemade spelt bread. And if you want to skip the carbs, simply dip raw vegetables into it.
